If you are a fan of crispy appetisers then during this lockdown cauliflower fritters or popcorn are great alternative recipes — when a snack craving hits. These cauliflower recipes are super addictive and a breeze to make.

Cauliflower Fritters

Serves: 6

Preparation: 10 minutes

Cooking: 10 minutes

Ingredients

1 head cauliflower, chopped into florets

⅓ cup parsley or coriander, roughly chopped

1 lemon, cut into wedges

2 eggs

½ cup standard flour

⅓ cup Parmesan cheese

2 tablespoons olive oil

Pinch salt and pepper

Method

Place the cauliflower into a food processor and process until the cauliflower resembles rice.

Transfer the cauliflower into a bowl and add the eggs, flour, parsley or coriander, salt and pepper and Parmesan cheese.

Mix everything well — it should be paste-like (if mixture is too wet, add a little more flour).

Heat a frying pan over medium heat and add the olive oil.

Using a tablespoon, scoop the mixture to form fritters. Fry the fritters for 3-5 minutes on each side or until golden.

Serve the fritters with lemon juice, extra herbs and sour cream or dressing of choice.

Cauliflower Popcorn

Serves: 4-6

Preparation: 5 minutes

Cooking: 30 minutes

Ingredients

1 medium-sized cauliflower

½ cup grated Parmesan, plus a little extra

2 teaspoons fresh rosemary

2 tablespoons olive oil

Method

Pre-heat oven to 180°C, line an oven tray with baking paper.

Rinse and break up cauliflower into small round florets.

Grate Parmesan and finely chop rosemary.

Combine cauliflower, Parmesan and rosemary in a bowl and drizzle with a little olive oil. Mix until well covered.

Spread cauliflower onto oven tray, top with a little extra cheese.

Bake for 30 minutes or until golden brown. — Courtesy of 5+A Day
