Mary’s marvellous muffins

As soon as the first of the season’s feijoas start to drop, I start dreaming about Mary Dods’s delicious, moist feijoa cake and feijoa muffins. Like many people during this lockdown period, Mary has been busy in the kitchen whipping up treats to keep her bubble buddies happy. Here’s her marvellous feijoa muffin recipe . . .

Mary’s marvellous muffins

INGREDIENTS:

75g melted butter

1 cup feijoa pulp

2 big eggs

¾ cup sugar

2 cups SR flour

¼ cup orange juice

Grated orange rind

1 tsp cinnamon

METHOD:

• Heat oven to 175 degrees and butter muffin tins.

• Mix wet ingredients into dry.

• Spoon into the muffin tins.

• Sprinkle with 1 tsp of cinnamon mixed with 1 tbsp of sugar.

• Cook until browned.

Feijoas are a high-fibre fruit rich in vitamin C. They also contain potassium, magnesium and folic acid, so they are good for pregnant mums.
