Family favourite

Hine Nikora-Porou learned this easy ambrosia recipe from her grandmother. ‘She always makes it for Christmas dinner with the family,’ says Hine. ‘I think it’s everyone’s favourite Christmas dessert.’

Ingredients:

300ml cream (slightly whipped)

1.5kg yogurt (your preference for flavour)

1 cup fruit (whole, chopped or sliced)

6 Cadbury Flake confectionary bars (or roughly 1 cup of chocolate)

1 cup marshmallows

(I prefer my ambrosia mixture wet. If you prefer a firm ambrosia just halve the yoghurt amount)

Method:

• In a large bowl slightly whip the cream until it is a smooth consistency.

• Add in the yoghurt, fruit and marshmallows and fold the ingredients together.

• You can mix the chocolate flakes into your ambrosia or have them as a topping.

• Chill in the fridge for 1 hour or until you are ready to serve.

Tip: I have frozen some ambrosia to make it an ice cream-style dessert.

Hine with the finished product in a loaf tin.
Ambrosia can also be served in little glasses.
